Easy to make, even easier to eat!
Get your fibre, potassium, iron, vitamins, good fats while boosting your energy not your blood sugar levels.
Here’s the recipe:
- 1/2 cup chopped nuts of your choice (you can add sunflower and pumpkin seeds to make it nut free)
- 15 pitted dates, chopped (you can add some goji berries to this)
- 1/3 cup shredded coconut
- 1 1/2 TBSP cocoa powder
- 1 TBSP organic coconut oil
- 1 TBSP water
- pink of Himalayan sea salt
Throw it in the processor. Pulse for a few minutes until broken down. If you pinch it and the mixture holds you are good to go.
Now make little balls in your palm, squeezing them tightly. Roll them in more shredded coconut if you’d like. Put them into the fridge to set for about 10 minutes.
I find these store nicely for the week in a glass container. This makes about 15-20 balls depending how big you like them.
